陳皮係廣東特產,用柑嘅皮製成。將柑皮曬乾或者天然風乾後放入真空器皿裝著,噉就唔會咁易發霉,可以擺好耐。擺得唔夠三年就唔夠「陳」,只可以叫果皮或者柑皮。[1]
廣東人煮食時好多時都會用陳皮來調味,好似煲湯、煲粥、煲紅豆沙同綠豆沙、蒸海鮮。陳皮亦可以當口立濕。用來蒸海鮮一類嘅食材係因為陳皮可以癖袪海鮮嘅腥味,例如將陳皮切成幼絲狀,加埋蔥絲放響泥鯭魚上面一齊蒸,既可以癖祛泥鯭魚嘅腥味,亦可以祛埋啲泥味。
陳皮亦係廣東三寶頭一個。
