菜(粵拼:coi3),或者叫蔬菜(so1 coi3)或者菜蔬, 係植物,亦係一類嘢食。由於係植物,所以通常都會有豐富嘅纖維同維他命,如果係豆類嘅話,重會有好多蛋白質。佢無科學嘅定義,係好主觀嘅。
除咗生果、殼、果仁、山草藥、香料之外,任何一種食得嘅草本植物,都可以叫做菜。菇之類都算係菜,雖則佢係生物學上係另一界,屬於苔蘚界。(以前係歸入植物。)
菜有分葉菜,例如生菜;莖菜,例如蘆筍;根菜,例如蘿蔔;花菜,例如西蘭花;地下莖葉(例如蒜頭);瓜菜,如青瓜、南瓜、牛油果、青椒等;豆菜,例如青豆、荷蘭豆、豆角。
