小雞燉蘑菇是一道東北名菜,市面上所有的東北菜館幾乎都提供這道菜,正宗的做法是採用東北地區當地的榛蘑以及農家散養的土雞燉製而成。目前見到的多是用干蘑菇雞肉粉條等一同燉製。做法是將雞肉加入料酒、鹽等炒勻,加入適量水煮約10分鐘,然後放入蘑菇再用中火燉三四十分鐘。[原創研究?]
