酪梨油是指用酪梨(Persea americana)果實壓榨而成的植物油。除作為食用油外,酪梨油還被用作潤滑油,或用於製作化妝品。
酪梨油富含單不飽和脂肪酸與維生素E,同時可以促進類胡蘿蔔素等營養素的吸收。[1]
酪梨油的冒煙點相當高。未精煉的酪梨油的冒煙點可達249 °C(480 °F),精煉後更是能達到271 °C(520 °F)。[2]因此,其適用於油炸、燒烤等高溫烹飪方式。
