雞腸,是雞的腸臟,是雞的內臟(粵稱「雞雜」)之一,是下欄。雞腸食法,洗淨切段,滾水加米酒飛水消毒,待涼後加入芹菜、蔥、辣椒、蒜頭進油鍋爆香,拌炒至熟,熱食。
食雞腸,小心清潔,所以通雞腸要完全衛生,去肥膩。
