糊粉层

糊粉层（英语：aleurone layer，源自希腊文aleuron，意指面粉）是禾本科与部分真双子叶植物^[1]种子胚乳外层的一或数层细胞，主要成分为蛋白质。糊粉层与胚乳内层在形态与生理上均有不同，糊粉层的细胞含有称为糊粉粒（aleurone grain）的蛋白质储存胞器，形状多为规则立方形，胚乳内层细胞则多含有淀粉颗粒，细胞大且形状不规则^[2]。糊粉层是米糠中营养成分最高的部位^[2]，其与种皮相连，会在碾米过程中被当成外壳去除^[3]。糊粉层也含有许多种子发育必须的脂类、各种矿物质与维生素，但不含有淀粉^[3]。在某些玉米中，糊粉层中的花色素苷是其种子蓝紫色的来源^[2]。

糊粉层的细胞含有称为糊粉粒的蛋白质贮存构造，糊粉粒是由液胞特化、干燥而成的胞器^[4]，其中含有由蛋白质形成的晶状体（crystalloid），以及无机盐与一些有机物结晶形成的球状晶体（英语：Globoid (botany)）^[5]，最初描述糊粉粒晶状体的植物学家Nägeli认为此物质不是真正的结晶，而是介于溶质与结晶间的物质，不过之后也有学者认为此物质属于结晶^[6]。晶状体中除了蛋白质，还有脂质分子可能会将蛋白质连结起来以形成结晶，因此油脂可能是晶状体的母溶液^[6]。小麦糊粉层仅有一层细胞，占整个种子的5-8%，但其中的蛋白质含量占了整个种子蛋白质的15%，离氨酸的含量则高达整个种子的三成，且其种子有超过一半的矿物质贮存于糊粉层^[3]。

玉米、小麦、裸麦与燕麦等常见谷物的糊粉层均只有单层细胞，大麦的糊粉层有三层细胞^[7]^[8]，稻米则可能有一或多层细胞的糊粉层^[2]。

胚乳发育时，位于其边缘的细胞经由多次平周分裂（periclinal division）与垂周分裂（anticlinal division）后发育成糊粉层，其中牵涉许多基因表现的调控。dek1与cr4基因均可促进糊粉层的发育^[2]，其中前者为细胞发育成糊粉层时，接收位置讯号所需^[9]，位置讯号可能来自胚乳周边的组织，也可能是细胞本身因处于胚乳表面所产生的内在讯号^[2]，缺乏dek1基因的突变株（因Mu转座子插入其基因序列造成）细胞无法正常发育成糊粉层，而是形成充满淀粉粒的内层胚乳^[10]。位置讯息直到种子发育晚期仍对糊粉层的形成相当重要，因为糊粉细胞与淀粉细胞直到发育晚期都仍有互相转换的可能，在发育晚期失去dek1基因亦会使糊粉层细胞失去位置讯息的刺激而转而发育成淀粉细胞^[10]。cr4基因编码的蛋白质是一个激酶受体，也与糊粉层发育过程中的讯息传递相关^[2]。

糊粉层最重要的功能便是种子萌发时，植物的胚会分泌一种称为吉贝素的植物激素，与糊粉层细胞表面的膜蛋白受体结合后^[11]，刺激糊粉层释放α-淀粉酶、蛋白酶、核酸酶与其他水解酵素将胚乳中的养分水解以供胚利用^[12]，此讯息传递路径有G蛋白偶联受体与钙离子的参与^[11]^[13]，且受到离层素的抑制，在某些谷类中，离层素在糊粉层中可能会自我催化而转换成菜豆酸（英语：phaseic acid），进而抑制α-淀粉酶的合成^[14]。另外有研究指出此时糊粉层细胞因粒线体与乙醛酸循环体因脂质代谢旺盛，会使细胞中活性氧类的浓度提升，这些活性氧分子可造成一些膜蛋白的氧化状态改变，可能也与种子萌发时糊粉层细胞内的讯息传递路径有关^[15]。完成此一任务后，糊粉层的细胞会经由细胞凋亡而死亡^[16]。此反应也被利用于酿酒，即以吉贝素处理大麦，以确保麦芽同时萌发^[17]。

除此之外糊粉层还有数种其他功能，以确保种子发育的正常进行。其一是在种子萌发后维持胚乳较低的pH值，许多谷物的糊粉层会释放磷酸与柠檬酸等有机酸，将胚乳的pH值保持在4-5，因为这是最适宜α-淀粉酶作用的pH值，此机制有助于胚乳养分的分解^[18]。大麦的糊粉层在缺氧的状态下还会向胚乳的淀粉层与质外体分泌亚硝酸盐^[19]。另外有一种血红蛋白存在于大麦、稻米种子外部包括糊粉层在内的几层活细胞中，惟其功能尚不明^[20]，此蛋白可能是正常种子萌发过程所需，也可能是种子面临低氧逆境的一项适应^[21]，在缺氧状态下，糊粉层中此蛋白的浓度会上升^[22]。

某些植物的糊粉层可以分泌PR-4等抵抗真菌感染的蛋白质，可能是植物免疫反应（英语：Plant disease resistance）的一部份^[2]^[23]。在某些植物中糊粉层还与种子休眠（英语：Seed dormancy）有关^[2]。
