煠(又寫做熠、烚,粵拼:saap6),又叫焯(又寫做灼,粵拼:coek3),或者叫淥(又寫做熝,粵拼:luk6),係一種煮食技巧,將生料嘢食放入滾水,叫做煠。生料食材例如蝦、肥牛、生菜咁。煠熟嘢食可以保持原汁原味,尤其係新鮮、爽、嫩、滑材料,又健康。
煠可以用清水「白煠」,或者加料似打甂爐。又可以白煠之前,食料加工腌製,比如加啤酒、糖、白酒咁,好似鵝腸、豬腰比較會先腌後煠。
