豉油,書面語叫醬油,係東亞飲食嘅主要調味料。豉油主要用黃豆加澱粉、小麥同食鹽發酵而成。
豉油成分有鈉、胺基酸、糖類、有機酸、色素同香料。好嘅豉油有鮮味、香味。能增加改善嘢食美味,增添菜餸色澤。豉油分生抽同老抽兩種。老抽用嚟煮餸;生抽用嚟點味。
日本叫豉油叫做醤油,但讀音竟然係廣東話相近嘅發音豉油しょうゆ 。[註 1]
越南話都係可以叫豉油做 xì dầu 同廣東話發音一樣。
