春卷係用薄麵皮,捲住啲餡,經油炸嘅中國點心。各地嘅餡同大細都唔同,但基本係扁圓筒狀。南方多用菜加肉做餡,北方多用紅豆做餡,偶然都會用到菜,但極少用到肉。
春卷嘅原形係中國北方立春食嘅春餅,本身係將餡夾落餅皮度食,後尾演化出整成卷狀攞去炸,就變成春卷,亦唔再限住立春先至有得食。
中國嘅春卷一般好細條,直徑20厘米嘅碟可以裝十幾條。美國華人食店做嘅春卷有肉餡,大大碌,一條春卷可以當一餐飯,好似漢堡咁。春卷亦都係滿漢全席中第二席中嘅一味餸。
