簡介
將榆樹皮最外層深色部分刮掉,留下內層嫩皮,曬乾、粉碎、篩羅之後即為榆皮麵。[1]在糧食匱乏的年代,不少人以榆皮麵作為口糧。[2]
榆樹皮含有較多的多糖類物質,其加工產出的榆皮麵黏性和筋性較好,有時也會被作為麵粉或其它穀粉(如玉米粉、高粱麵)的添加劑使用,目的是讓麵團更易加工、成品更加筋道。[1][3]
