二粒小麥或鐵殼麥是一種四倍體有芒小麥。[4]馴化種是Triticum turgidum subsp. dicoccum和Triticum turgidum conv. durum。野生和馴化的主要區別在於,野生二粒小麥成熟的種頭會破碎,並將種子散落在地上,而馴化的二粒小麥的種頭仍保持完整,從而使人類更容易收穫穀物。[5]

二粒小麥與一粒小麥一樣,是近東地區最早被馴化的作物之一,它在古代世界廣泛種植。然而自8000年前,栽培的二粒小麥偶然與山羊草屬的節節麥(Aegilops tauschii)雜交出普通小麥後,由於普通小麥更為耐寒,環境忍耐性更好,其便取代了二粒小麥成為人類最廣泛栽培且熟悉的小麥。二粒小麥現為歐洲和亞洲山區的遺留作物。
二粒小麥被認為是Farro食品的一種,特別是在義大利。[2]
歷史
野生二粒小麥原產於中東新月沃土,生長在今以色列到伊朗的山地草叢和林地中。野生二粒小麥的原產地被認為是土耳其東南部的卡拉卡達格山區,但學者們沒有達成普遍的共識。1906年,阿龍·阿龍索赫恩發現生長在以色列羅什平納(英語:Rosh Pinna)的野生二粒小麥,在植物學界引起轟動。[6]在考古發掘和古墓中都發現了二粒小麥。二粒小麥在被馴化之前的幾千年裡,一直被獵人採集者從野外採集食用。在Ohalo II發現的野生二粒小麥粒的放射性碳測年為公元前17000年,在Netiv Hagdud(英語:Netiv Hagdud)的前陶新石器時代A期(英語:Pre-Pottery Neolithic A)遺址中,野生二粒小麥的年齡為10000-9400年。[7]
最早的二粒小麥馴化遺址的位置還不清楚,還在爭論中。[8]一些最早的遺址可能間接證明了初期前陶新石器時代B期(英語:Pre-Pottery Neolithic B)的二粒小麥馴化。[8]
在新石器時代的大量遺址中發現了二粒小麥,這些遺址散布在肥沃的新月形地區。從最早的種植時期開始,二粒小麥就比同時代的穀類作物和競爭者——一粒小麥和大麥更為突出。[9]在印度次大陸的梅赫爾格爾一期就有少量的二粒小麥存在,說明公元前7000-5000年,那裡已經有艾美爾的種植。[10]
在近東地區,尤其是美索不達米亞南部,從公元前3000年左右的青銅時代早期,二粒小麥的種植開始減少,大麥成為標準的穀類作物。這與灌溉沖積土壤的鹽鹼化程度增加有關,而大麥對沖積土壤的耐受性更強,[11]儘管這項研究受到質疑。[12]二粒小麥在古埃及有著特殊的地位,在法老時代,二粒小麥是主要的栽培小麥,在第三王朝時期,栽培的二粒小麥大量種植,在薩卡拉台階金字塔下的地下墓室中,發現了大量的二粒小麥和栽培的二粒小麥、大麥。[13]鄰近國家也種植了一粒小麥、硬質小麥和普通小麥。[14]在沒有任何明顯的功能解釋的情況下,古埃及飲食中更多地使用二粒小麥,可能只是反映了一種明顯的烹飪或文化偏好,也可能反映了第三王朝之後種植條件的改變。二粒小麥和大麥是古埃及麵包和啤酒的主要原料。從腓尼基人定居在瓦盧比利斯[15](今摩洛哥)的定居點發現的二粒小麥的年代是在公元前一千年中期。
可能是古代拉比文獻中提到的五種穀物之一,猶太人在逾越節期間要用它來做馬扎。[16]
食用

二粒小麥的主要用途是作為人類食品,但也用於動物飼料。來自土耳其和其他二粒小麥種植區的人種學證據表明,二粒小麥可以製作優質麵包(根據傳統麵包的口味和質地標準判斷),古埃及廣泛食用二粒小麥作為麵包的證據也證明了這一點。[17]荷蘭和瑞士有二粒小麥麵包。[18]
