炒馴鹿肉(芬蘭語:poronkäristys)是源自拉普蘭的著名菜餚。通常用馴鹿背上的肉或肉排做成的,馴鹿肉顏色深厚及低脂肪。準備時先把馴鹿肉切成薄片(把肉冰凍或解凍至零度左右最容易切),然後在平底鍋里用脂肪油炒。傳統上是用馴鹿的脂肪油,但現今也可以用豬油和黃油,或因健康原因用植物油。炒時添加胡椒和鹽,炒後再添加少許水或者啤酒煮一會兒。
