炸卷圈是用香油、麻醬、醬豆腐、薑末、五香粉、鹽等調拌綠豆菜、香乾、香菜、粉皮等成餡,以豆皮卷餡,切成約十五厘米的長段,用麵粉、醋、鹽調成的糊粘兩頭切口,然後下油鍋炸,炸成金黃色即可[1]。外脆里香,一般用餅夾着吃[2]。
