茶湯,是一種傳統小吃,味甜、香醇,味道細膩[1],主要分為山東茶湯和北京茶湯[2]。茶湯的製作方法是在炒熟的糜子面上放上紅糖,再用開水沖食[3]。相傳茶湯起源於明朝;茶湯是用開水沖熟而成,猶如泡,故得名「茶湯」[2]。由於北京茶湯多是用壺口為龍嘴狀的壺來沖制,因此又被稱為龍茶[4]
