乾貝(另稱甘貝、玉珧、元貝、珧柱、江珧柱、瑤柱、江瑤柱、乾瑤柱等)為一種海鮮食品原料,由瓣鰓綱異柱目扇貝科和江珧科貝類動物的後閉殼肌曬乾後閹製而成。由於其為乾燥脫水食品,烹調前必須先用水漲發。
