粗面是由小麦粉和水制成的直径较粗的面条。中国有两种粗面条,一种是上海本帮菜中的粗面条,一般上海炒面中的面条比较粗 [1][2],另一种是香港饮食中的粗面条,此类面条扁而宽, [1]而且外观上看上去有些发黄,它是一种碱性面食。[3]
