鸡肠,是鸡的肠脏,是鸡的内脏(粤称“鸡杂”)之一,是下栏。鸡肠食法,洗净切段,滚水加米酒飞水消毒,待凉后加入芹菜、葱、辣椒、蒜头进油锅爆香,拌炒至熟,热食。
食鸡肠,小心清洁,所以通鸡肠要完全卫生,去肥腻。
