酪梨油是指用酪梨(Persea americana)果实压榨而成的植物油。除作为食用油外,酪梨油还被用作润滑油,或用于制作化妆品。
酪梨油富含单不饱和脂肪酸与维生素E,同时可以促进类胡萝卜素等营养素的吸收。[1]
酪梨油的冒烟点相当高。未精炼的酪梨油的冒烟点可达249 °C(480 °F),精炼后更是能达到271 °C(520 °F)。[2]因此,其适用于油炸、烧烤等高温烹饪方式。
