油饭,是台湾一种传统的米食料理,通常是以熟的糯米,去拌入香的佐料。佐料常见的有猪肉丝、鱿鱼丝、香菇丝、豆干丝、干虾仁、虾米,以及比较少见的栗子、花生、腊肉腊肠,然后,加上辛香料的蒜、姜、红葱头、白胡椒、黑胡椒,以及酱油、麻油、清米酒,去料理而成。

根据台湾民众的传统习俗,家中若有婴儿出生,会在其满月时烹煮麻油鸡、红蛋、油饭祭祖并分送亲友以示庆祝,并且会因婴儿性别来决定油饭内是否添加鸡腿[1]
