Hongshao rou (kinesisk: 红烧肉) er en svinekjøttsrett fra Kina. Den tillages med kjøtt fra svinemage kombinert med ingefær, hvitløk, aromatiske krydder chilipepper, sukker, lys og mørk soyasaus og risvin.
Mange kinesiske provinsen har lett forskjellige versjoner av retten, men den hunanesiske (som ofte presenteres som «familien Maos manér» (kinesisk: 毛氏紅燒肉; pinyin: Máo shì hóngshāoròu)) og som en av formann Maos favorittretter, serveres i mange Hunan-restauranter i hele Kina som spesieliserer seg i «Mao-kjøkkenet».[1] Rettens popularutet har fått Hunans provinsregjering til å kodifisere resepten, og der forsøkes det knesatt at kun griser av den rase som er fra Ningxiang kan brukes i autentisk hongshao rou.[2]
