Slottet ble oppført av offiseren Erhard von Ehrentreuter van Hofrieth (1596–1664) i årene 1642–1645 og navngitt etter hans hustru friherreinne Eva von Ungnad – Evenburg.[1] Parets yngste datter, Maria, giftet seg i 1665 med offiseren Gustav Wilhelm von Wedel-Jarlsberg, slottet gikk etter hans død videre til parets nest eldste sønn, Erhard Frederik.[2][3] Slekten Wedel ble på Evenburg frem til 1930-årene, hvor hovedresidensen ble flyttet til slottet Gödens.[4]
Evenburg har vært ombygget flere ganger, og etter en større restaurering åpnet det i 2014 for besøkende.
