Crustum,[1] Latinitate mediaevali interdum tortellus,[2][3] est libum quo farcimen fructuum, holerum, piscium aut carnis, in materiam[4] ordinatum, fornace coquitur (materia sic in crustam convertitur). Inter fercula huius generis in arte coquinaria Europaea, tam mediaevali quam recentiore, pastillum clausum et torta[4] aperta distingui solent.
