1764. aastal Katariina Suure poolt Berliinist omandatud umbes veerand tuhandele hollandi ja flaami kunstniku teosele ning 1769. aastal Dresdenist omandatud umbes 600 maalile on sajandite jooksul lisandunud hulgaliselt kunstiteoseid kogu maailmast. Külastajatele avati kunstikogu 1852. aastal Keiserliku Ermitaaži nime all.
XXI sajandi alul oli muuseumis ligi kolm miljonit eksponaati kiviajast nüüdisajani,[3] sealhulgas maailma suurim maalikogu, mis teeb kunstikogu suurimaks Venemaa Föderatsioonis ning üheks suuremaks ja respekteeritumaks kunstivaramuks maailmas. Viimaste aastate jooksul on muuseum laienenud Talvepalee ees Palee väljakul asuvasse Kindralstaabi hoonesse ja Ülikooli kaldapealsel Vassili saarel asuvasse Menšikovi paleesse. Riigi omanduses oleval muuseumil on ka mitu näitusekeskust välismaal.
Muuseumis on eksponeeritud teoseid paljudelt autoritelt, kelle hulgas on sellised maailmakuulsad kunstnikud nagu Caravaggio, Francesco Casanova, Paul Cézanne, Leonardo da Vinci, Jacques-Louis David, Edgar Degas, Paul Gauguin, Filippo Lippi, Henri Matisse, Claude Monet, Pablo Picasso, Pierre-Auguste Renoir, Rembrandt, Peter Paul Rubens, Tizian, Vincent van Gogh, Jacob van Ruisdael, Diego Velázquez, Paolo Pagani.
Nimetus "ermitaaž" tähendab eraklikku arhitektuurilist kompleksi. Väljapanekute põhiosa asub viies 18. sajandil ja 19. sajandil Neeva vasakkaldale püstitatud ehitises:
Jelizaveta Petrovnale residentsiks ehitatud Talvepalee valmis alles pärast keisrinna surma ja muuseumi rajajaks sai Katariina Suur. Õukonnamelust pääsemiseks laskis Katariina II 1764. aastal ehitada Talvepalee kõrvale pisema pelgupaiga, millest tulenes ka nimetus Väike Ermitaaž.
