From Kipchak; ultimately from Proto-Turkic *bïčgak.[1] Compare Romanian briceag and Albanian biçak. The form bicskia (“shomaker's knife”) is borrowed from Ottoman Turkish via Serbo-Croatian bičkija.[1]
