炸(粵拼:zaa3)係一種用滾嘅食油將嘢食煮熟一種方法,所以「炸」又叫做油炸(粵拼:jau4 zaa3)。通常係喺鍋內放入好多油,加熱,然後再將嘢食放入去,令佢熟透且表面金黃色。呢種煮食方法可以用喺好多食材嘅加工,如炸油炸鬼,炸雞等等。
炸過嘅嘢食比較香口,所以細路好鍾意食,但油炸用油喺用後會變質,重用多次嘅油會含有大量致癌物質,宜抵制唔成日換油嘅油炸食品;油炸食品亦含有大量脂肪,一般認為現代社會容易攝取過多油脂,有必要節制食用油炸食品,可以減少出暗瘡嘅可能、並減少對健康嘅負面影響。
