豆豉嚮台灣民間又叫做「營養豆」,因為佢營養成分唔錯,每百克豆豉熱量237千卡、蛋白質20.4g、脂肪11.5g、碳水化合物12.8g、膳食纖維10.8g、維他命C2/2mg、維他命E13.71mg、鈣146mg、鎂90mg、鉀642ng、磷206mg,作為發酵食物,針對中老年人比未發酵食物易消化吸收[1],不過亦有話濕熱體質、痰濕體質、特稟體質、瘀血體質嘅人唔適宜食豆豉[2]。
