炸雞係用食油油炸雞肉。炸雞因用味料同油溫、煎法先後次序唔同,有好多種風味,比如原雞肉連皮連骨雞件,或者已去雞肉塊。先煎半熟,再去炸香咁,唔同國家地區炸雞,都有個別特色。
