茴香豆是浙江省紹興市一帶的常見下酒物之俗稱,顏色青黃,表皮起皺,因魯迅的《孔乙己》一文而聞名。
茴香豆的具體做法是把乾蠶豆(當地人叫「羅漢豆」)泡浸後瀝乾入鍋,加進 桂皮、茴香(八角茴香)、食鹽和食用山萘等調味料,添水適量,用文火慢煮(以使調味品汁能從表皮到豆肉吸收),當水被大致煮乾後,揭開鍋蓋冷卻即成。
