果聚糖

果聚糖是果糖分子的聚合物，存在於洋薊、蘆筍、四季豆、韭蔥、洋蔥、蔥、菊薯、小麥等食物中。

菊糖的分子結構，大多數果聚糖都是菊糖型。

在動物飼料中，牧草也含有果聚糖，由此可以看出果聚糖可能是馬科的飲食必需。

類型

從上到下依次為菊糖型、Levan型、Graminan型，綠色部分可重複若干次。最下方的Graminan型果聚糖名為6,6&1 kestopentaose。

果聚糖有3種類型：

1. 菊糖型 - 線型果聚糖，通常以β（2→1）配糖鍵連接
2. Levan型 - 線型果聚糖，通常以β（2→6）配糖鍵連接^[1]
3. Graminan型 - 支鏈型果聚糖，以β（2→1）和β（2→6）配糖鍵連接

功能

能將營養物質轉化成果聚糖的植物可以在低溫條件下良好的生長，因為果聚糖能增強植物的耐寒性。果聚糖會與細胞膜結合，可以保證細胞形態，使細胞不致受損。

意式麵食	1－4%[2]
白麵包	0.7－2.8%[2]
