冰肉,實際上是指用燒酒白糖精製過的肥豬肉。有分熟醃和生醃兩種。

特點

將肥肉用大量的白糖與適量的燒酒拌勻,醃約數天即成冰肉。醃成之後的肥肉雪白如,瑩潤透明,故稱「冰肉」。冰肉入口清甜爽口,不肥不膩,能有這種口感,是因為白糖與燒酒混合後,與肥肉三者發生化學反應,去除了肉中油膩之故[1]
