纽沙特起士（法语：Neufchâtel），产自法国西北部诺曼地的纽沙特昂布雷，最早可见于11世纪的文献，是一种古老的法国起士[1]。纽沙特起士以心形的外形为其特征，重100至600克，白色表皮。味道较强烈，偏咸味。
