软壳蟹

软壳蟹，是刚刚换壳（英语：Ecdysis），新外壳还是柔软状态的螃蟹^[1]。除了口器、鳃及腹部，整只蟹都可以食用^[2]。通常以油炸方式烹调，炸好的软壳蟹可以用来制作寿司或手卷^[3]。
