开平餐饮的前身是夏耀珊1953年创办的夜间补习中学，取张载“为往圣继绝学，为万世开太平”，命名为“开平中级补习学校”，1956年更名为“开平中学”，设高中日间部，成为六年一贯完全中学， 1982年改制为“开平工商职业学校”，1996年改为综合高中，更名“开平高中”，2007年定名为“开平餐饮学校”，成为中华民国第一所餐饮专业学校[1]。
