酯酶(英語:esterase)是一種水解酶催化劑,可在水分子的參與下,經由水解作用,將酯類切割成酸類與醇類。此類酶參與多種生物化學反應,依其專屬受質、蛋白質結構,以及功能而有不同。
EC酶分類
- EC 3.1.1:羧酸酯水解酶類(Carboxylic ester hydrolases)
- 乙酰酯酶(Acetylesterase,EC 3.1.1.6),可分開有機化合物的乙酰基官能基。
- 膽鹼酯酶(Cholinesterase)
- 乙酰膽鹼酯酶(Acetylcholinesterase):能抑制神經遞質乙酰膽鹼(acetylcholine)的能力。
