觸變性（英語：thixotropy）[1]是指某些非牛頓流體的一種性質，它們在攪拌時成為流體，而停止攪動後逐漸變稠以及膠凝，而不是立即恢復到攪拌前的狀態，而且這一過程可以反覆可逆進行。觸變性也是流體結構可逆轉變的一種現象，即凝膠-溶膠-凝膠的轉變，它是由溫度、pH或其他影響因素而引起。[2]
