新野板面,也稱張飛板面[1],是源自於中國河南省南陽市新野縣一種麵食。因勁道有力受到人們的喜愛。板面製作揉好的麵團在石板上反覆摔打形成麵條的形狀,下鍋和蔬菜煮熟,放入大碗中,澆上專有的新野臊子,色香味俱全。主要味道來源於臊子,面及湯無味。

起源傳說

相傳三國時期劉備屯兵於新野縣時,張飛嫌傳統麵條太軟沒勁,於是廚師反覆研究,製作了「板麵條」,張飛嘗後連連稱讚。[2]
