京醬肉絲是一道傳統的北京風味菜餚。以豬里脊肉為主料,輔以黃醬或甜麵醬及其它調味品,用北方「醬爆」技法烹製而成。食用時以蔥絲、腐皮為作。口味鹹甜適中,醬香濃郁,風味獨特。另有為素食主義者準備的素食版本,以炸豆腐替換里脊肉。
