臨洺關牌驢肉香腸又稱驢灌腸臨洺關香腸永年驢肉香腸,是河北邯鄲地區漢族的風味傳統驢肉小吃,邯鄲十大名小吃之一,屬於冀菜系[1]

起源

臨洺關牌驢肉香腸源於清末,由杜竹山創立,到如今已有近百年歷史。該驢灌腸的驢肉靠着極高的味美被尊為上乘美食。

作法

永年臨洺關牌驢肉香腸選用精驢肉,剁成肉沫,再加上綠豆粉芡合小磨香油、多味名貴作科用老湯調製成的糊狀,灌入驢腸衣內,紮成一小捆,再用高溫蒸煮滅菌,最後用果木熏制而成。因此永年「驢肉香腸」又被稱為「驢灌腸」[2]
