魚肝油(也稱「肝油」)是一種從鱈魚等海洋魚類肝臟中提取的,通常為黃色到橙紅色的透明油狀液體,帶有魚腥味。

1848年挪威開始用水蒸汽加熱法製造魚肝油。1880年日本採用水煮法製造魚肝油。魚肝油通常被加工為膠囊劑型,作為營養品用來補充人體所需的維生素A維生素D,但過量可能會發生維生素中毒的現象。
