碧螺蝦仁是中國蘇州蘇幫菜的著名傳統菜式。用鮮活小河蝦剝出蝦仁，洗淨瀝乾水分，加精鹽、蛋清、澱粉過油，再加碧螺春茶葉沖泡的茶水略炒，點綴茶葉即成。
