煙熏(jerk)是一種牙買加本土的烹調方法,指的是對肉類進行擦拭,或者使用一種非常辣的香料「牙買加煙薰香料」進行醃泡。傳統上,煙熏佐料用於豬肉雞肉。現代的配料也把煙薰香料用於魚肉蝦肉貝殼牛肉香腸羊肉豆腐。煙熏佐料主要依賴於兩種東西:多香果粉和蘇格蘭煙熏辣椒(scotch bonnet pepper)。其他的配料包括丁香肉桂肉豆蔻百里香大蒜
