無錫

無錫油麵筋,又稱為「清水油麵筋」,是無錫特產。所謂「清水」,指的是以素油(植物油,通常選用上好的菜籽油)炸制,而並非以清水漂洗。無錫油麵筋外觀呈球形,皮脆而內松,表金黃而里晶白,常與各種葷素菜搭配。[1]

天津

天津的油麵筋多呈塊狀,與無錫油麵筋的球形不同。天津當地名菜「獨麵筋」即是以這種油麵筋製成。
