倒缸酒是湖南嘉禾縣出產的甜型黃酒。嘉禾縣當地釀酒史悠久,可上溯至始於東周,興於漢代,因釀製時將糟燒或水酒倒入糟缸,故名「倒缸酒」。但歷史上的倒缸酒歷來為水酒,無法長期存儲,且受季節限制,只可於冬至開釀,春節開壇飲用,因此過去的倒缸酒一直為民間自釀自飲,[1]從未有過商業化量產;即便當局為保留倒缸酒傳統釀造技藝而於1953年成立嘉禾酒廠後,年產量也只為區區五十噸而已。為解決上述問題,嘉禾酒廠1985年開始研發倒缸酒新產品,1990年成功,次年投產。新品乃甜型黃酒,因廣受歡迎而迅速取代了以前產品,使銷路由原僅限當地而擴張至外省,酒名為嘉禾倒缸酒,因貯存期較水酒可大為延長,民間自釀者也改釀此款新品;[1]若封存兩年或更長,便是極品。[1]
