金礦開採是指從富含金的地層中開採黃金的過程。目前有多種技術可以從地層中開採出黃金，最原始的方法是淘金。目前工業上多用氰化法提純金，但氰化物有毒，因此正在開發新的提金試劑。人類在數千年前就開始開採黃金了。
