將干皮肚用清水泡發至變軟即可。皮肚經漲發後,可切成絲、片、塊等形狀,適宜於涼拌、燒湯等烹調方法。中國南京著名小吃「皮肚面」就是以皮肚為主要原料烹製而成[2]。
