牛柳(英語:beef tenderloin),也叫牛里脊里脊,又稱菲力(英語:fillet),是指從腰內側沿恥骨前下方順着腰椎緊貼橫突切下的淨肉,即牛的腰大肌[1]

牛柳是牛胴體肉的一部分,分割牛胴體時先剝去脂肪,然後沿恥骨前下方把里脊剔出,然後由里脊頭向里脊尾,逐個剝離腰椎橫突,便可取下完整的里脊[2]
