金達萊花菜(韓語:진달래화채)也稱杜鵑花菜,是一種花菜,屬於朝鮮半島的傳統甜品。由金達萊花、五味子、綠豆澱粉、松仁、白糖、蜂蜜等製成。[1][2]
製法是,將金達萊花去蒂後的花瓣洗淨,蘸上綠豆澱粉,在沸水中焯一下。再將金達萊花瓣放入加了糖和蜂蜜的五味子水中即可。[1]
傳統上會在農曆三月三日食用金達萊花菜。
