豆干亦称豆腐干,是徽菜、鲁菜、川菜、粤菜、苏菜与台湾料理中常见的食材。豆干由豆腐经过脱水、压缩制成。常见的豆干有白豆干、五香豆干两类。烹饪方法以凉拌、炒、卤、炸较为常见。[1]
