霸王鸡,又叫葱油鸡,是广东客家菜之一,也是泉章居名菜,为淋上葱油的白切鸡[1]

做法

放入锅内开水煮20秒,取出放入冷水,再煮滚水,后放入鸡转小火煮约7分钟后熄火续切长段后拍散并切丝,放入冷水中浸泡;切片后改刀切丝也泡入水中;辣椒对剖去籽后切成丝也泡入了水中。取出鸡后将麻油淋上,后放下姜葱辣椒即完成。
