蒜蓉,也叫蒜末蒜泥或蒜茸,是把蒜头用刀剁成小粒状、用工具磨成泥状、或用蒜茸钳(大蒜碾压器)压碎,常用于烹饪调味,令蒜味均匀分布在食物中,也常用作食物馅料或蘸汁调料;其若于沥干水后再经油炸炸成酥脆状,即称为“蒜酥”。
